Gluten Free Meatloaf

Meatloaf is a classic comfort food dish.

List of Ingredients

  • 1 ½ Ibs ground turkey (93% lean is best)

  • ½ cup gluten-free oats (or almond flour)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 egg (or flax egg for egg-free)

  • ¼ cup milk (or dairy-free alternative)

  • 3 tbsp ketchup (instead of mustard & Worcestershire)

  • 1 tsp apple cider vinegar (or lemon juice) (adds a little tang)

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp smoked paprika (optional, but adds depth)

  • ½ tsp Italian seasoning or dried oregano

For the Glaze:

  • ¼ cup ketchup

  • 1 tbsp maple syrup or honey

  • 1 tsp apple cider vinegar



Directions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

  2. Mix all ingredients (except glaze) in a large bowl. Stir until just combined— don't overmix.

  3. Shape into a loaf on the baking sheet or press into a loaf pan.

  4. Make the glaze: Mix ketchup, maple syrup, and vinegar. Spread half over the meatloaf.

  5. Bake for 40 minutes, then spread the rest of the glaze on top.

6. Bake another 15-20 minutes, until the internal temp reaches 165°F (74°C).

7. Let it rest for 5-10 minutes, then slice and serve!
