Gluten Free Meatloaf

Meatloaf is a classic comfort food dish.

List of Ingredients
1 ½ Ibs ground turkey (93% lean is best)
½ cup gluten-free oats (or almond flour)
1 small onion, finely chopped
2 cloves garlic, minced
1 egg (or flax egg for egg-free)
¼ cup milk (or dairy-free alternative)
3 tbsp ketchup (instead of mustard & Worcestershire)
1 tsp apple cider vinegar (or lemon juice) (adds a little tang)
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika (optional, but adds depth)
½ tsp Italian seasoning or dried oregano
For the Glaze:
¼ cup ketchup
1 tbsp maple syrup or honey
1 tsp apple cider vinegar
Directions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
Mix all ingredients (except glaze) in a large bowl. Stir until just combined— don't overmix.
Shape into a loaf on the baking sheet or press into a loaf pan.
Make the glaze: Mix ketchup, maple syrup, and vinegar. Spread half over the meatloaf.
Bake for 40 minutes, then spread the rest of the glaze on top.
6. Bake another 15-20 minutes, until the internal temp reaches 165°F (74°C).
7. Let it rest for 5-10 minutes, then slice and serve!
